As a Farmstead Creamery, Capra Nera cheeses are made from a single source of milk: the 30ish goats that comprise the milking herd at the farm in rural SE Minnesota. The ladies - all of whom have names, such as Eleanor Roosevelt or Button - are fed a small amount of grain at milking time, but enjoy the lush green of pasture plants for much of their production season. Cheese is made frequently, with ultra fresh milk, in small, hand-crafted batches.
A childhood passion for goats led Katie Bonow (cheesemaker and goat midwife), to owning her very first goat - a Nubian named Blossom. Home cheesemaking experiments quickly ensued. Further education in Italy and Vermont have improved Katie's cheesemaking skills, and the goat herd maintains its lineage back to its matriarch, Blossom. Located in the Driftless Region, near Altura, MN, Capra Nera Creamery focuses on making high quality, hand-crafted batches of farmstead, raw milk goat cheese.
