Rye is a hearty cereal grain used extensively in the baking of northern and eastern Europe. We find this Light Rye flour to be perfect for making fine pastries like pie crusts and cookies. This flour is less tannic than its whole grain counterpart, and we hope it’ll inspire you to find new ways to incorporate rye into your baked goods.

Our flours are all stone milled which preserves the integrity and nutritional value of the grain. Bolted Flours have been sifted after milling to remove the largest bran particles, but still contain the nutrient dense germ and starchy endosperm.
